BEEF TRIPE
PROCESS…
The resulting product is washed in cold water, then the fat is removed, and it is boiled for 45 minutes in water at 35°C. The product is then cleaned of the black film and washed again in cold water. Afterward, the abomasum is cooked in two cycles at 35°C. The product is boiled to 80% and packed in plastic bags and carton boxes. The finished goods are then placed in a chamber with a temperature of -0°C for a day and subsequently stored in a refrigerator at -18°C. The weight of the finished product in each box ranges from 18kg to 20kg

OMASUM
The top of the beef cut and removed, cleaned of dirt with water, and then 100% of the fat is removed. Each sheet is treated with salt and stays for 4 days and then soaked in a salty bath for 1 days. Afterward, it is washed in salty cold water to remove salt and dirt. The beef is then placed on a press for 2 days, packed in polyethylene bags, and sent to the refrigerator at -18°C. Each bag weighs from 35 to 50 kg, and the humidity is not less than 3% of the total weight of the beef.
PROCESS
Beef penis is obtained and then soaked in cold water, after which the fat and top layer are removed. The ends are then cut off, leaving the inner tube of the penis. This is cleared of urine and rinsed in cold water. The finished product is sent to the freezer at -40 degrees for 10 hours, then packed in plastic bags and carton boxes before being stored at -18 degrees. Each box contains 20 to 22 kg

PROCESS
The upper part is cleaned of grease and any unnecessary layers. The canal of the genital organ is then blown and washed in cold water. Following the washing process, it is sent to the hotting house for 48 hours for drying. After dried, the products are packed in sacks and sent to the warehouse for storage. The packing is done according to our clients’ preferences, whether they want it in cutting or without cutting.
